Dr Baxter is an accomplished general surgeon from Australia who specialises in upper gastrointestinal, bariatric, and laparoscopic hernia surgeries. He graduated from the University of Queensland in 1986 and pursued advanced surgical training in general surgery at the Royal Brisbane Hospital for nine years before traveling to the UK to become a fellow in upper gastrointestinal surgery, endocrine surgery, hepatic and pancreatic surgery. Dr Baxter returned to Queensland in 1997 as Director of Surgery at the Queen Elizabeth II Hospital in Brisbane. He established his private practice on the Sunshine Coast in 1999, where he continues to be a fellow of the Royal Australasian College of Surgeons.

Dr Baxter harbors a particular interest in the upper gastrointestinal system, which spurred his fascination with bariatric surgery, leading to the formation of the Sunshine Coast Medical Weight Loss Centre. He was a pioneer of bariatric surgery on the Sunshine Coast, and since 1998, he has carried out more than 4,000 local surgeries. Dr Baxter's move to Sunshine Coast with his wife and four daughters was a dream come true. When not at work, he enjoys horse care, gardening, beachcombing, surfing, playing music, and cherishing quality time with his family.
